This is a quick dessert in our house that we refer to as "Poor Man's Strawberry Shortcake". Meaning, the strawberries are not in season and therefore we use strawberry jam in a biscuit with whipped cream instead. But do not be fooled! It is just as delicious and satisfying of a dessert. Of course, if you have fresh strawberries you should put them in!
I have a very difficult time buying berries in the winter. I am all about the seasonal produce game not to mention berries in the winter time do not taste right and are more expensive.
Therefore, I give you Poor Man's Strawberry Shortcake! Or Off-Season Strawberry Shortcake? Whichever you prefer. Obviously you can make this when strawberries are in season and it will be very delicious! When we make these with jam, however, we make sure the jam is top quality. We also like to make our own whipped cream as it doesn't take very long at all, is delicious, and doesn't have all the added junk of store-bought. So probably by the end of this recipe it may be cheaper to just buy the strawberries but I can guarantee they won't taste as good as if it were spring and summer!
Ingredients:
1 batch of Gluten Free Buttery Biscuits or store-bought
Strawberry Jam (we prefer Bonne Maman brand)
1 pint of heavy whipping cream
1/2 tsp vanilla extract
1 tsp sugar or to taste
*Note: I tend to use less sugar in my whipping cream because the jam has plenty of sweetness. If using real strawberries, you may want to add a touch more but this is all up to preference!
Instructions:
After your biscuits have been made and have cooled, make your whipped cream. In a stand mixer with the whisk attachment, beat the heavy whipping cream, sugar, and vanilla extract until stiff peaks form.
Slice a biscuit in half, spread as much jam as you'd like, and top with a huge dollop of whipped cream. Enjoy!
